Chana masala (chickpea curry)

Try this delicious curry - so quick and easy to make.

Ingredients

Serves 4

2 Tbsp canola oil
1 onion, chopped
1 Tbsp crushed ginger
3 cloves garlic, crushed
1 tsp garam masala
1 Tbsp curry powder
1 x 400g can chickpeas, drained and rinsed
1 x 400g can crushed tomatoes or 2 fresh tomatoes, diced
1 Tbsp lemon juice
2 cups spinach leaves

Method

Heat oil in a large saucepan.
Sauté onion until soft.
Add garlic, ginger, garam masala and curry powder and cook briefly until fragrant.
Add chickpeas, tomatoes and lemon juice and cook over low heat until thickened.
Turn off heat, stir through the spinach and serve.
