Coriander dip with vegetable sticks
Love the taste of coriander? Then this dip is for you. Enjoy as part of a meal or tasty snack.
Makes ½ cup
1 cup coriander leaves
¼ cup extra virgin olive oil
2 Tbsp pine nuts
Place all ingredients in a blender and process until coriander is finely chopped.
Add more oil if necessary.
Serve with vegetable sticks, e.g. lightly cooked asparagus, green capsicum, celery, beans.
