Courgettes with oregano in tortilla boats

A tasty dish known as Calabacitas a la Mexicana in Mexico.

Ingredients

Serves 4

1 Tbsp canola oil
½ onion, peeled and chopped
1 tsp crushed garlic
2 tomatoes, chopped
1 Tbsp chopped fresh oregano
3 courgettes, chopped
1 cup fresh or frozen New Zealand sweet corn kernels
pinch salt
freshly ground black pepper, to taste
2 Tbsp sour cream
grated Parmesan cheese

Method

Heat the oil in a heavy-based frying pan over medium heat.
Add onion, garlic and tomatoes and stir fry for 3 minutes.
Mix in oregano, courgettes, sweet corn and salt. Cook for another 5 minutes, stirring occasionally.
Add salt and pepper and place mixture in tortilla boats.
Top with sour cream and Parmesan cheese and serve.
