Cucumber and yoghurt dip
There are plenty of ways to enjoy this versatile dip which is also known as tsatziki. Try it with falafels, pita crisp, crudites, or lamb kofte. Watch the video on how to make it.
1 cucumber, grated
1 clove garlic, crushed
¼ cup chopped mint leaves
1 ½ cups plain unsweetened yoghurt
1 Tbsp lemon juice or vinegar
Place grated cucumber in a sieve or clean tea towel and squeeze out the excess liquid.
Mix all ingredients in a bowl.
Cover and place in the fridge until ready to serve.
• with lamb kofte and salad
• pita crisps and crudites - asparagus, carrot, capsicum
• with falafel in pita bread and salad
• with curry - used like raita.
