Cucumber cups

A very playful way to eat vegetables.

Ingredients

Serves 1-2

1 cucumber
cottage cheese or hummus
carrot and capsicum sticks for garnish

 

 

 

Method

Slice cucumber into even pieces – approximately 3 cm each.
Scoop flesh out of the top of each piece.
Chop the scooped flesh and add to the cottage cheese.
Fill each cup with cottage cheese mixture.
Decorate by adding carrot and capsicum sticks before serving.
