Cucumber sandwiches

Sandwiches, but not as you know them.

Ingredients

Serves 1-2

1 medium cucumber
½ avocado, peeled, stone removed
½ tsp lemon juice
½ cup natural yoghurt
½ x185g canned tuna

 

 

Method

Slice cucumber into rounds.
Combine avocado, lemon juice and yoghurt. Mash together. Add tuna and combine.
Lay out half of the cucumber disks and scoop filling on top.
Cover with the other half of the disks.

Tip: Keep the quantities of avocado, tuna and yoghurt equal for the best results.
