Fennel, sprout and orange salad
Colourful and delicious.
1-2 bulbs fennel, trimmed and finely sliced
½-1 punnet pea sprouts
1 large orange capsicum, deseeded and finely sliced
2 Tbsp orange rind
¼ cup orange juice
¼ cup lite olive oil
1 Tbsp sugar
Combine fennel, pea sprouts and capsicum in a bowl.
Place orange rind, orange juice, olive oil and sugar in a screw top jar and mix well. Drizzle over salad.
Cover salad and leave in the refrigerator until ready to serve.
Transfer to serving bowl and serve.
