Fruity watercress and chicken salad
The peppery taste of the watercress in this recipe goes well with the sweetness of the fruit.
8-10 iceberg lettuce leaves
2 handfuls watercress
1 cup crunchy bean sprouts
3 spring onions, finely sliced
1 smoked chicken breast, thinly sliced
¼ cup lemon or lime juice
¼ cup lite olive oil
2 Tbsp sugar
freshly ground black pepper, to taste
2 cups sliced strawberries, or chunks of melon, pawpaw or persimmon, kiwifruit
½ cup crunchy noodles
Arrange lettuce leaves on serving plates.
Place watercress, sprouts, spring onion and chicken on the leaves.
Place lemon juice, oil and sugar in a screw top jar and mix until the sugar dissolves. Pour over salad.
Sprinkle with pepper and serve garnished with strawberries and noodles.
