Green beans with dill and shallots
Yummy - and looks good too.
450g green beans, stemmed
2 Tbsp canola oil
4 shallots, peeled and thinly sliced
3 Tbsp chopped dill
freshly ground black pepper, to taste
Fill a large bowl with ice water and set aside.
Bring a large saucepan of lightly salted water to a boil.
Add beans and cook for about 5 minutes or until bright green and slightly tender.
Drain and immediately immerse in the ice water. Drain again and pat dry.
Heat oil in a large heavy-based frying pan. Add shallots and stir fry for 2-3 minutes.
Add beans and toss to warm through. Add dill and salt and pepper.
