Iceberg lettuce with orange and red capsicum
The simplicity of this crisp iceberg lettuce salad pairs well with barbecued chicken or meat.
4 cups sliced iceberg lettuce
1 orange capsicum, deseeded and sliced
1 red capsicum, deseeded and sliced
¼ green capsicum, deseeded and sliced
½ cup grated carrot
8 black olives pitted and sliced
2 Tbsp white vinegar vinaigrette
chopped fresh parsley, to garnish
Place lettuce, capsicums, carrot and olives in a bowl.
Drizzle with vinaigrette and toss.
Garnish with parsley and serve.
