Kūmara and bacon salad
The flavour combination of bacon and kūmara is sensational. Use this technique with different ingredients - even changing the leaf base can make the salad seem completely different.
2 gold kūmara, sliced into very thin slices
canola oil spray
¼ cup pine nuts
2 rashers bacon, finely chopped
5 handfuls green leaf lettuce
1 avocado, sliced
2-3 Tbsp vinaigrette e.g. lemon
Preheat oven to 200°C.
Place kūmara on an oven tray. Spray with oil.
Bake in preheated oven for 15-20 minutes or until just cooked. Remove from oven and add pine nuts and bacon and bake another 3 minutes.
Remove from oven and allow to cool slightly.
Place lettuce on a serving platter, top with avocado and kūmara mixture.
Drizzle vinaigrette over and toss gently.
