Kūmara and date loaf

A healthy twist on the traditional date loaf. Watch the video on how to make it.

Ingredients

Makes 1 loaf (16 portions)

2 eggs
½ cup canola oil
½ cup plain yoghurt
1 tsp vanilla extract
1½ cups cooked,mashed kūmara
½ cup chopped dates
1¾ cups wholemeal flour
¼ cup brown sugar
2 tsp baking soda
1 Tbsp mixed spice

Method

Preheat oven to 180°C.
Grease and line one loaf tin with baking paper.
Add the eggs, oil, yoghurt, vanilla and kūmara to bowl, and mix until combined.
Mix in the dates.
In a large mixing bowl, combine the flour, brown sugar, baking soda and mixed spice.
Add the wet ingredients into the dry and mix to combine.
Pour the batter into the loaf tin.
Bake in preheated oven for approximately 40-45 minutes or until cooked through and a dark golden brown.
