Pea and cheese omelette


Makes 1

2 eggs
1 tsp canola oil
½ cup cooked frozen peas
2 Tbsp grated cheese
1 Tbsp chopped parsley
chopped parsley, for garnish


Beat eggs in a bowl.
Heat oil in a small frying pan over a medium heat.
Add eggs and allow to cook for 30 seconds, stirring a little.
Place peas, cheese and parsley in a line across the middle of egg mixture.
When egg is cooked enough to fold, gently fold one half over the filling.
Continue to cook on that side for another 30 seconds then turn over and cook on the other side for a further 30 seconds.
Garnish with parsley and serve.
