Pea sprout and spring onion salad
Add colour to the menu with this tasty salad.
1 cup pea sprouts or snow pea shoots, sliced
3 spring onions, sliced
1 cup frozen peas, cooked and chilled
12 cherry tomatoes, sliced in half
¼ cup vinaigrette
Place all ingredients in a bowl and mix together.
Pour over vinaigrette and toss.
Store covered in refrigerator until ready to serve.
