Purple carrot spread
A vibrant coloured and tasty spread. There is no need to peel the carrots.
500g purple carrots, chopped and cooked
4 Tbsp olive oil
1 clove garlic, crushed
1 tsp ground cumin
2 Tbsp chopped parsley
parsley sprigs, for garnish
Place carrots, oil, garlic, cumin and parsley in a blender and process.
Pour into a bowl and serve garnished with parsley sprigs.
