Quinoa with roast carrots and onions
Quinoa is one of the world's oldest grains and originally came from South America.
2 cups red quinoa
4 carrots, sliced and roasted
4 onions, peeled, quartered and roasted
chopped fresh herbs for garnish
Bring a large pot of lightly salted water to the boil, add quinoa and bring back to the boil.
Reduce heat and simmer for 12-15 minutes. Drain.
Place in a mixing bowl, add carrots and onions and toss gently.
Place in a serving bowl, and garnish with herbs.
Serve warm or cold.
