Radish, cucumber, tomato and butter bean salad
A quick and easy salad, make double and use half today, and refrigerate the other for lunch tomorrow. Watch the video on how to make this recipe.
4 radishes, diced
½ telegraph cucumber, diced
3 tomatoes, diced
1 x 400g can butter beans, drained and rinsed
1 Tbsp lemon zest
¼ cup chopped parsley, coriander or mint
2 Tbsp lemon juice
2 Tbsp canola oil
Mix all ingredients together in a large bowl.
Keep refrigerated until ready to serve.
