Salad in a watermelon
A novel way to serve a refreshing summer salad.
½ telegraph cucumber, sliced into chunks
1 cup diced yellow capsicum
mint sprigs for garnish
Slice zig zag around the middle of the watermelon.
Scoop out the flesh. Remove seeds and slice flesh into chunks.
Mix with the cucumber and the capsicum.
Pile back into a watermelon half.
Garnish with mint sprigs and serve with a vinaigrette alongside.
