This affordable one pot meal takes 30-45 minutes to make and lots of vegetables can be added


Savoury Vegetables and Mince


Serves 4

1 tbsp oil
1 onion, finely chopped
500 g beef mince
1 tsp stock powder
2 cups kumara, grated
400 g can tomatoes, or 4 fresh tomatoes, chopped
2 cups water
2 cups silverbeet leaves and stalks, sliced finely
1 cup frozen peas
2 kumara, red and orange cooked, diced, to sprinkle over the dish


  1. Heat the oil in a large saucepan
  2. Gently cook the onions until soft
  3. Add the mince and brown
  4. Add the stock cube, kumara, tomato, silverbeet stalks and water. Cook for 10 minutes
  5. Add the silverbeet and peas
  6. Cook for 5 minutes
  7. Serve with diced, boiled, red and orange kumara and parsley
