Savoury vegetables and mince
This affordable one pot meal takes 30-45 minutes to make and lots of vegetables can be added.
1 Tbsp canola oil
1 onion, peeled and finely chopped
500g beef mince
1 tsp stock powder
2 cups grated kūmara
400g can tomatoes, or 4 fresh tomatoes, chopped
2 cups water
2 cups silverbeet leaves and stalks, sliced finely and kept separate
1 cup frozen peas
2 kūmaras, red and orange, cooked and diced, to sprinkle over the dish
1-2 Tbsp chopped fresh parsley, to garnish
Heat oil in a large saucepan.
Add onions and cook gently until soft.
Add mince and stir fry until brown.
Add stock cube, grated kūmara, tomatoes, silverbeet stalks and water.
Cook for 10 minutes then add silverbeet leaves and peas and cook for a further 5 minutes.
Serve with kūmara dice and parsley.
