Snow peas with spring onion, mint and lemon zest
Try this recipe with sugar snap peas or a mix of snow and sugar snap.
250g pack snow peas
1 Tbsp Extra virgin olive oil
1 spring onion, finely sliced
12 small mint leaves, washed
zest from one lemon
Slice the stalk end off the snow peas.
Wash and place on a platter.
Drizzle with olive oil.
Add spring onion and mint leaves, and top with lemon zest.
Serve and enjoy.
Variation: Use sugar snap peas in place of the snow peas.
