Long red capsicums are so sweet and so delicious. However you can use any red capsicum for this dish.
2 long sweet capsicums
1 large red kūmara, boiled and mashed
½ red onion, finely diced
freshly ground black pepper, to taste
¼ cup grated mozzarella cheese
2 Tbsp chopped fresh parsley
Slice capsicums in half horizontally and remove seeds.
Place mashed kūmara in a bowl.
Add red onion, salt and pepper and mix..
Pile kūmara mixture into capsicum shells and sprinkle with cheese.
Place under preheated grill until cheese melts.
Serve garnished with parsley.
