Tomato, cucumber and herb pasta salad
Popular with children and adults, this salad is also great for the lunch box.
500g cooked pasta, e.g. macaroni, penne, spirals
3 cups diced tomatoes
¼ cucumber, diced
⅓ cup pitted black olives, halved
1½ cups grated Edam cheese
¼ cup olive oil
3 Tbsp white vinegar
3 Tbsp chopped oregano
3 Tbsp chopped parsley
Combine pasta, tomatoes, cucumber, olives and cheese in a serving bowl.
Mix the oil and vinegar together and drizzle over the pasta and vegetables.
Toss gently, cover and place in the refrigerator until ready to serve.
Sprinkle with oregano and parsley and serve.
