Trio tomato salad
This attractive and tasty dish uses the many coloured tomatoes now available from stores.
2 red tomatoes, chopped
2 green tomatoes, chopped
2 dark red tomatoes, chopped
½ telegraph cucumber, sliced
6-8 black olives
¼ cup extra virgin olive oil
¼ cup chopped parsley
lemon or lime wedges for garnish
Place tomatoes on a serving dish.
Add cucumber and olives.
Pour extra virgin olive oil over.
Sprinkle with parsley and garnish with lime wedges.
