Warm courgette and corn salad
A delicious salad – try with chopped, diced celery or broccoli in place of some of the courgette.
2 Tbsp canola oil
2 cloves garlic, crushed
2 cups corn kernels (fresh or frozen)
4 courgettes, diced
4 Tbsp chopped parsley or coriander
4 tsp lemon zest
4 tsp lemon juice
3-4 fine slices of red capsicum, for garnish
Heat oil in a large frying pan or wok.
Add garlic, corn and courgettes and cook, stirring often, over a high heat until beginning to brown and are hot through.
Add remaining ingredients and mix well.
Remove from heat and serve.
