Quesadilla

The perfect snack to Add One More Veg especially for kids - try chopped spinach or grated courgette.

Ingredients

Serves 4

8 small tortillas or wraps
1 x 400g can refried beans
½ cup grated cheese
1 cup grated carrot
1 cup fresh or frozen New Zealand sweet corn kernels, cooked

Method

Lay 4 tortillas on a board and spread with refried beans.
Sprinkle cheese, carrot and sweet corn over beans.
Place remaining tortillas on top of beans and cheese.
Heat a frying pan over a low to medium heat without any oil.
Place filled tortillas in the frying pan and cook slowly until underneath is golden brown. Turn over after approximately 3-4 minutes. Cook until both sides are a golden brown. Remove from frying pan.
Slice in half and serve hot with a salad.

To make 8 tortillas:
1 cup wholemeal flour
1 cup white flour
1 tsp baking powder
3 Tbsp canola oil
2/3 cup water

Place ingredients in a bowl and mix together, then knead for about 5 minutes or until smooth.
Wrap in cling film and rest for 30-60 minutes.
Divide dough into 8 portions.
Place a little flour on a board or bench and use a rolling pin to roll dough into 25cm round discs, about the size of a small dinner plate.
